Dijon Grilled Pork Chops

Dijon Grilled Pork Chops
 
Makes: 4 servings
Prep Time: 5 mins
Cook Time: 20 mins 
 
Ingredients
6 (tablespoon) Dijon mustard
6 (tablespoon) honey
3 (tablespoon) unsweetened apple juice
3 (tablespoon) Worcestershire sauce
4 (8.0 ounce) bone-in pork loin chops

Notes / Directions
In a bowl, combine the first four ingredients; mix well. Pour 2/3 cup marinade into large resealable plastic bag; add the pork chops. Seal bag and turn to coat. Refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade for basting.
Preheat grill to medium high heat. Lightly oil grate on grill. Drain marinade from pork. Grill, covered, over medium heat for 6-10 minutes on each side or until a meat thermometer reads 160 degrees F; basting occasionally with reserved marinade. Serve.

What a day of eating looks like for me!

 Breakfast- Chocolate Shakeology with 1 TBS almond butter, 1/2 cup almond milk, water, ice, banana, 1 TBS ground flax.



Lunch- Grilled chicken breast, cucumber, split peas

                                   


 Snack- apple, broccoli with homemade hummus

 Dinner- Grilled chicken, cauliflower
I also had some almonds and brown rice crackers for another snack but forgot to take a picture!

Stuffed Zucchini

 This wonderful recipe came from Mrs. Fae Shaffer :)

Ingredients
1 lb of 99% lean ground turkey
1 1/2 cup cooked quinoa
half of a large sweet onion, chopped SMALL :)
3 cloves of garlic
1 can sodium free tomato sauce
zucchinis ( i used 6 medium sized one, the larger ones are easier to work with)
one small tomato (the softer the better)
Red/Yellow Bell peppers (half of each will work)

Directions:
preheat oven to 350
Cut the zucchinis in half-length wise. Take a small spoon and scoop out as much of the center as you can (place in a separate bowl, do NOT throw away) set aside. chop up the onion (3/4 of the 1/2 mentioned above), bell peppers, and 1 zucchini very small, and sauté, set aside to cool. Cook the turkey, set aside to cool. Take a small pot, and put the white part of the zucchini that you scooped out, add 1/4 or 1/2 cup of water (and a pinch of salt) and let it cook a bit till its softer. You can add the cooked quinoa, turkey and sautéed veggies in a bowl and mix up, set aside. In another pot, sauté the remaining 1/4 of onion, once its cooked, add the can of tomato sauce, the zucchini stuffing from the other pot, and crush the garlic and add to the pot. this is where you can get creative and add your own spices. I used garlic powder, salt, white pepper and crushed red pepper and oregano (i like it a bit spicy) let it cook a bit. Once the sauce is done, add half of it to the quinoa/turkey/veggie bowl and mix up. In a LARGE pot, boil some water, and put the zucchini in long enough to make them softer, take them out and dry off. Last but not least, lol, after the zucchinis have cooled, scoop some of the quinoa mix into the zucchinis, put in an oven safe pan, and lightly drizzle remaining sauce on top of zucchinis. Put in the oven for 20 minutes. Take them out and ENJOY :) FYI - I had a good amount of  the mixture left over, so I put it in the freezer and will use it another day.

Clean Eating Chicken Marsala

Clean Eating Chicken Marsala

(Makes approximately 5 quarts)
NOTE: Don’t let the ingredient list scare you. Most of the recipe is spices. This is actually a very quick and easy recipe to make!
Ingredients
1 cup unsweetened almond or light coconut milk (I used almond milk)
1 tbsp. white vinegar
Juice of 1 lemon
2 tbsp. cumin
2 tsp. ground cinnamon
2 tsp. curry
1 tbsp. garlic powder
2 tbsp. onion powder
1 tbsp. garam masala
2 tsp. chili powder
1 tsp. coriander
2 tsp. ground ginger
2 (15 oz.) cans light coconut milk, unsweetened
5 large chicken breasts, boneless & skinless
1 (28 oz.) can diced tomatoes (no sugar added)
1 (6 oz.) can tomato paste (no sugar added)
Fresh cilantro for garnish

Directions
Step 1 – Combine all ingredients (except the cilantro) in a 5 quart crock pot and cook on high for 4-6 hours or until chicken is fully cooked. Stir occasionally during cooking process to be sure the chicken gets submerged in the liquids.
NOTE: It will start out looking a bit thick and dry, but the liquids will release into the pot after about an hour or so of cooking. If this does not happen for some reason and you feel it will burn without more liquids, add 1/2 to 1 cup of clean, low-sodium chicken broth. But wait a full hour before doing so.
Eat and Enjoy!

Parchment-Baked Chicken with Arugula, Sage and Rosemary

 Parchment-Baked Chicken with Arugula, Sage and Rosemary


Ingredients
• 4 sections of parchment paper cut into 12 x 16-inch pieces
• 2 cups / 480 ml arugula leaves, torn
• 4 x 4-oz boneless, skinless chicken breast halves
• 2 tsp / 10 ml fresh chopped sage, divided
• 2 tsp /10 ml fresh chopped rosemary, divided
• 1 cup /240 ml chopped plum tomatoes, divided
• Sea salt, to taste
• Freshly ground black pepper, divided
• 4 tsp / 20 ml extra virgin olive oil
• 4 tsp / 20 ml kalamata olives, sliced and pitted (optional)
• Clean cooking spray
Preparation
  1. Preheat oven to 450°F / 232ºC.
  2. Fold parchment paper in half to create a crease. Unfold the paper and coat it lightly with cooking spray, leaving a two-inch border.
  3. Place ½ cup arugula on one side of the parchment so it touches the fold but not the ungreased border.
  4. Place chicken breast over arugula; sprinkle with ½ teaspoon sage and ½ teaspoon rosemary. Top with 1/4 cup chopped plum tomato.
  5. Add a pinch of salt and black pepper then drizzle with ½ teaspoon olive oil. Top with 1 teaspoon of olives if desired.
  6. Fold parchment paper over the chicken and arugula and seal edges with narrow fold.
  7. Repeat with the remaining parchment paper, chicken and other ingredients.
  8. Place packets on baking sheets. Bake for 20 minutes or until puffy and lightly browned.
  9. To serve, open packets and transfer arugula and chicken breast to plates. Pour juices over top.

Slow Cooker Pork & Kale

Slow Cooker Pork & Kale

(Makes about 9 cups)
Ingredients
2 1/2 lb pork loin chops
7 cups chopped, raw kale
1 (28 oz.) can diced tomatoes, no sugar added
2 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. balsamic vinegar

Directions
Step 1 – Place everything in your slow cooker, pork chops on the bottom layer and tomatoes on the top layer.
Step 2 – Cook on low for 8-10 hours.
Eat and Enjoy!

I wont let it hold me back

I had my procedure done on Wednesday. It went really well! They put me out so I was very loopy when I woke up for a couple of hours. Jed was laughing at me telling me I kept telling him the same things over again. Haha! Everything went WAYY better compared to my biopsy:) I'm really thankful I was able to switch doctors.

Of course that has put me out of working out for a little while. I won't let that hold me back though;) My first instinct is to eat bad since I don't feel good and can't workout anyway. And to be honest with you that's what I did the first couple of days but I'm starting now. I'm back on track eating healthy. I can't wait to finish healing and start up p90x! I might even do the p90x/insanity hybrid. I haven't really decided yet. I think Jed is going to do p90x also, so I'm super excited about that!

It really feels amazing passing this journey along to other amazing people who are in this to get healthy and feel good about themselves:)

I've been slacking on posting recipes so I'm going to try to get back to that :)

Back to the real world :)

I'm starting another beach body challenge starting April 16th. Please comment if you'd like to be apart of it! Only accepting 6-7 people. That way I can give everyone the attention they need to succeed!


So I spent the last week in Florida. I had a blast! Looking back at the pictures I'm pretty impressed to where all my hard work paid off with working out and eating right! I feel pretty confident with my body! :) Beach body has truly changed my life for the better. I totally PIGGED out while I was in Florida. But I am glad to be home and back on track:)




I'm taking a little break from working out! I have my procedure March 28th and it will take me a few weeks to heal but soon as I'm all healed up I will be jumping into another program!

Wow. I've completely amazed myself. If I didn't take pictures every week of my results I would have never knew how much my body was changing! The combination of shakeology and Insanity's workout program has given me these AWESOME results. And keep in mind that during the middle of this I also had to take 3 weeks of because of medical reasons!! Let me know if you want help getting results like these ;)

WOW :)

I wanted to share some of my teams successes! Two the women I am coaching are KILLING it! One of them has lost 4 lbs and 6 inches in 11 days and another one of them has lost 8lbs in 7 days! I am so proud of them. They are truly putting some hard work into this and its definitely paying off!!


10 days until I leave for Florida! I'm so excited:) I'll be busting my butt until then with my workouts!!!

Cheese alternative! :)

How many of you just LOVVVVVEE cheese?! I do! I have gone without it for a while because I knew it was bad for me but today I've discovered a new alternative and I love it!!!:)

ALMOND CHEESE

I normally make the same stuff over and over again just because its convenient but now that I'm working from home I'm trying to experiment with new recipes! So tonight I made chicken tacos. Made it with Ezekiel tortilla's, almond cheese, lettuce, ground chicken and I made my own seasoning since the packets are PACKED with sodium! I used chili powder, cumin, garlic powder, salt free chicken seasoning and ground red pepper. They turned out PERFECT :)




So I'm wrapping up Insanity in March and I'm going to start it all over the beginning of April and I'm going to start a challenge group! What insanity and shakeology have done for me

So I work out 6 days a week and drink shakeology everyday. Every now and then I think to myself is this REALLY working. Looking in the mirror I feel like I'm getting no where! But luckily I've been taking progress photos to track my progress....

YIKES! I look at these and I'm amazed! This is what keeps me motivated to continue my workouts. I've lost 6lbs and 5 inches! Yes Insanity works and yes shakeology works!! I've never felt so amazing and so proud of myself for sticking to this program. I'm truly getting the results I've been wanting for years! And I'm not close to done, this is just the beginning of my journey! Soon as this round of insanity is over I'm doing it all over again to accomplish even MORE goals!

Early Riser??

I'm struggling with waking up early since I know I don't have to go into work at 2pm anymore! I've been sleeping in until 7:30-8! When I don't wake up earlier and jump right into my workout I find that its harder to get it started. I procrastinated on it today until 10am! Starting tomorrow I'm going try to focus on waking up between 6-6:30. If you have any suggestions let me know?? It was easy when I knew I didn't have a WHOLE day to waste. Today my workout was max recovery. I love the recovery workouts, I feel like I'm getting a break. What workout did everyone else do today???

My procedure got cancelled yesterday since my period was late and they wanted to make sure I wasn't pregnant so they gave me a blood test. I'M NOT PREGNANT, in case you were wondering. So looks like I wont be getting my procedure done until I come back from Florida. So I'm ok with that, but that means I'm going to get nervous all over again.

Tomorrow I'm going to dinner with a few girls from the church, I'm pretty excited about it. It's Thai food so hopefully I can find something healthy to eat there. If you have any suggestions let me know. I normally would look at a menu online but its a hole in the wall place and they don't have a website. Oh well!

Tips on how to stay on track!

 I wanted to give some good tips on how to stay on track with your nutrition! I know it can be very hard not to stop and get fast food because its convenient or eating some ice cream because you are just craving it! I think we all can struggle with these things! Please comment if you have other suggestions also!!


Before you tear into that bag of potato chips, drink 16oz of water. People sometimes confuse thirst with hunger, so you can end up eating extra calories when an ice-cold glass of water is really all you needed. If plain water doesn't cut it then try cutting up fresh fruit and throwing it in your water to add a little flavor.

 Mindless eating occurs most frequently after dinner, when you finally sit down and relax. Snacking in front of the TV is one of the easiest ways to throw your diet off course. Either close down the kitchen after a certain hour, or allow yourself a low-calorie snack. My favorite night time go to is banana ice cream. I freeze bananas and throw one into the blender with a little bit of almond milk and its the same consistence as ice cream! I also will add either strawberries or cocoa powder to give it a different flavor than banana. But the banana gives it plenty of sweetness!

 Instead of cutting out your favorite foods altogether, be a slim shopper. Buy one fresh bakery cookie instead of a box, or a small portion of candy from the bulk bins instead of a whole bag. You can still enjoy your favorite foods -- the key is moderation. Me and my husband love to go out to dinner so what we personally do is have ONE cheat meal a week during the weekend and we'll go out to eat. Sometimes we don't do so well and it will drag it into Sunday but we try really hard to keep it to one day AND just one meal and then we normally will go out for ice cream afterwards. But I normally try to eat healthy the whole day up until we go out for dinner so I'm not destroying all the hard work I have done. But I know for me if I'm going to be successful and get the results I want I need to indulge once in a while and when I do it once a week it gives me something to look forward to.

ALWAYS EAT BREAKFAST. That's where a lot of people go wrong. They don't feel hungry or are too lazy to cook something but what they don't realize they are slowing down their metabolism. If you really don't like to eat breakfast, you can split it up into two smaller meals. Eat a hard boiled egg at home, and an hour or two later, take a break from work and snack on an apple and a handful of healthy nuts. 



Include fiber!!Fiber aids digestion, prevents constipation, and lowers cholesterol -- and can help with weight loss. Most Americans get only half the fiber they need. To reap fiber's benefits, most women should get about 25 grams daily, while men need about 38 grams -- or 14 grams per 1,000 calories. Good fiber sources include oatmeal, beans, whole grain foods, and a variety of fruits and vegetables.

Having ready-to-eat snacks and meals-in-minutes on hand sets you up for success. You'll be less likely to hit the drive-through or order a pizza if you can throw together a healthy meal in five or 10 minutes. Here are some essentials to keep on hand:

Fresh fruits and veggies and raw almonds. When I finish grocery shopping I always chop up my fruits and veggies and bag them up so when I open the fridge I can just grab it so I have no excuse to eat something unhealthy and "convenient".



I really love chopping up a red bell pepper and dipping it in hummus, its so yummy and healthy for you!



I get Crunchmaster whole grain crackers and dip them in hummus.



My FAVORITE meal of the day..SHAKEOLOGY! Its like drinking a chocolate milkshake except its HEALTHY! It completely takes away that chocolate or ice cream craving i have! I feel like I've cheated but I haven't :)




Banana/chocolate ice cream! Frozen banana, almond milk and cocoa powder. Just throw in a blender and you have ice cream! ANNDDD again...its HEALTHY :)
Dates cut into them and stick your favorite raw nuts in them!

I will NEVER regret working out

This morning I woke up at 3am again to get my workout done! I REALLY wanted to pretty the snooze button and just sleep until 4:30 but then that voice came in my head "Jessica, will you REALLY workout after you get off work?" NOPE, I wouldn't. So I decided to get butt out of bed and start my workout. Once I actually started I was fine and it woke me right up. NEVER have I ever said "man, i regret gettting up to workout". So why question yourself? You will thank yourself in the long run. You will ALWAYS regret NOT working out but you will neve regre working out :)


I'm going to try to post some recipes once in a while! Sweet Potatoes & Zucchini. Cut into cubes and rinse in water. Then put in a bowl and add a little sea salt, garlic & parsley. Bake @ 350 for 20-30 min. Really good!



Todays ADD IT IN: FLAX SEED:
Studies show that flaxseed may help fight everything from heart disease and diabetes to breast cancer.
Add a tsp to your shakes, cereal, yogurt, salad, or just about anything!! You will never even know it is there!!
  • Omega-3 essential fatty acids, "good" fats that have been shown to have heart-healthy effects. Each tablespoon of ground flaxseed contains about 1.8 grams of plant omega-3s.
  • Lignans, which have both plant estrogen and antioxidant qualities. Flaxseed contains 75-800 times more lignans than other plant foods.
  • Fiber. Flaxseed contains both the soluble and insoluble types.
I buy flaxseed in bulk from sprouts and throw it in my coffee grinder because you get more benefits from it when its gound up! Then i throw it in my shakeology, rolled oas or even food I cook :)

Determination?

Today I'm pretty much running on 3 hours of sleep! For some reason I couldn't fall asleep until a little after 11 and I set my alarm for 3am to workout but I actually woke up at 2:20am and couldn't fall back asleep. So I finally rolled out of bed at 2:40am and did my workout! You all must think I'm INSANE for waking up at 3am to workout but I have to be at work at 5:50 and I'm so exhausted by time I get home and theres just no way I could muster up enough motivation to workout!

I drank some shakeology after my workout. Added 1 cup of almond milk and 1/4 cup of plain greek yogurt. In a couple hours I will eat breakfast which will be 2 eggs and an apple.

Normally I only have to do this morning shift once a week but this week I'm covering for someone so I'll be working this same shift again tomorrow. I don't know how the heck I'll do it two days in a row but I'm determined!! I usually take a nap after work but I'm going to try to stay up so I can get to bed early.

Yikes! No wonder this fabulous superfood dons the nickname, “Andes Aphrodisiac”!

POMEGRANATE —   Pomegranate promotes optimal blood flow to the heart. It has also shown to lessen the amount of plaque in the arteries which results in smooth blood flow and reduction in disease. Lastly it also helps to raise much needed levels of cholesterol whiling helping to lower bad cholesterol that can cause heart attacks.  Pomegranate benefits your body as a whole because your body contains plenty of unstable molecules that can damage your DNA and your cells. This type of damage often leads to other diseases such as stroke and Alzheimer’s.  The pomegranate benefits these areas by using its antioxidant powers to fight off the unstable molecules thereby preventing these diseases. Therefore when you eat pomegranates that contain antioxidants such as polypenols and tannins you are going to live a much healthier life and reduce your chance at catching a fatal disease such as cancer or a heart attack.

BARLEY GRASS –   Barley grass is the only vegetation on the earth that can supply sole nutritional support from birth to old age.  Barley grass is very high in organic sodium, which dissolves calcium deposited on the joints and also replenishes organic sodium in the lining of the stomach. This aids digestion by improving the production of hydrochloric acid in the stomach. COCOA –   Cocoa is rich in flavonoids and antioxidants which can help in flushing out harmful toxins that could cause cell damage, premature aging and a whole host of diseases and illnesses.  It is also helpful in elevating the mood because of the phenylethylamine that it has.  Cocoa is also a natural source of magnesium (Magnesium is necessary for the manufacture and action of insulin also),which can help in relieving pre-menstrual syndrome, preventing and treating cardiovascular diseases and in lowering blood pressure.  Cocoa can also help in reducing the risk for developing type-2 diabetes and can also help in the manufacturing and the action of insulin.

INSANITY. What is it? How much do I LOVVVEEE it!?


I know I've posted in my blog about me doing Insanity and for those of you who have never tried it or never heard of it I wanted to go into more detail about it! First of all its a 60 day program. You work out 6 days a week for 2 months. I do Monday-Saturday and take Sunday off. For me its been a lot effective to get up early and knock it out of the way and then drink my shakeology since I KNOW breakfast is the most important meal and half of the time I'm way to lazy to cook anything healthy. Insanity comes with 10 different workout dvds so its constantly changing things up and I don't get bored with it. Unlike when I went to the gym I would just get on the same cardio machine every time and it got so boring! My coach talks with me pretty much every day to keep me motivated. She often will call me to wake me up or even skype with me if I'm lacking motivation. I love the feeling I have after I do Insanity! The first couple weeks I was having the press the pause button to catch my breath but each day I get better and better and I'm feeling so much stronger and I'm losing weight and FEELING amazing. Today I did plyometic cardio circuit and as usual it kicked my butt! I was definitely going in slow motion towards the end but it didn't even matter I pushed through until I finished it:) I have a hard time with the push ups but I can definitely tell I'm improved since day 1.

Sucess ANNNDDD set backs.

With this blog I don't only want to show you all the success I'm having in my journey but also show you the set backs I'm having. To show you it doesn't workout perfect but it will always make you stronger! At least that what my coach tells me ;)

I started Insanity January 9th which means I should be on week 6! The reality is I'm on week 4. Yes, I got VERY discouraged over this but I'm NOT quitting! All of the things that set me back was completely OUT OF MY CONTROL. I had an abnormal pap so I had to have a biopsy done. For those of you have had those done know its not pleasant and I pretty much was on the couch 3 days and still healing after that for another 4 days. So that put me out of my workout for a whole week. Started my workout back up the very next week and was able to finish the week out and then the very next week I got a HORRIBLE cold which may have turned into some sort of infection so I was out of my workout another week. I started my workout back up Monday even though I wasn't feeling 100 % and new my appetite was really CRAPPY but worked out anyway. Today is Wednesday and my energy level is zero and I want to throw up at the thought of eating. I was totally going to workout today, was determined. But after talking to my coach I realized I was trying to talk myself into thinking I was feeling fine because I'm HATING all these set backs!!! It makes me very angry. So yet again I'm having to NOT WORK OUT so I can get healthy. It drives me nuts but in the back of my mind I know that if I stress my body out when its not healthy as it needs to be and I'm working out when I'm not even eating I'm definitely NOT going to get the results I want. I'm just going to keep getting sicker. So with that said I am staying strong. I'm not going to lose hope. I know I can get through this. And I will finish Insanity even if it takes me longer than I wanted!

Next week on Wednesday I have another procedure (LEEP). Which will put me out of my workouts for yet another week. I'll hopefully the following week I'll be able to work out the March 14th I head to Florida for a week.

I AM NOT LETTING ALL THESE THINGS BE EXCUSES OF WHY I SHOULD JUST GIVE UP! I'M NOT GIVING UP, I'M GOING TO KEEP GOING AND I'M GOING TO BE STRONGER THAN EVER! :)
